My Approach to Eggless Baking
Eggless baking is not about finding one ingredient that can replace eggs in every recipe. Eggs perform several different jobs in baking, including providing structure, moisture, richness, and lift, so the ingredients that work well in one recipe may not give the same results in another.
Over the years, I have found that the best approach is to develop each recipe around the texture and structure it needs. Depending on what I am baking, I may use ingredients such as yogurt, sour cream, milk and vinegar, cornstarch, condensed milk, or fruit purees. Sometimes a recipe doesn’t need a direct egg replacement; the balance of the other ingredients is what matters.
That’s why the recipes in this collection are developed and tested specifically without eggs. My goal is always the same: to create baked goods with the texture, flavor, and appearance you would expect, without making the recipe unnecessarily complicated.
A Few Things I’ve Learned About Baking Without Eggs
There isn’t one perfect egg substitute. Yogurt may work beautifully in a cake or muffin, while cornstarch can provide structure in cookies. Condensed milk can add richness and moisture, while fruit purees work particularly well in certain muffins and quick breads. I choose ingredients based on what each recipe needs rather than using the same substitute every time.
Measure Your Ingredients Accurately. Eggless batters can be sensitive to changes in the flour-to-liquid ratio. I highly recommend using a kitchen scale, especially for flour. Too much flour is one of the easiest ways to end up with a dry or dense cake or muffin.
Don’t Overmix the Batter. Once the dry and wet ingredients are combined, mix only until everything comes together. Overmixing can develop too much gluten and make eggless baked goods dense or tough.
Pay Attention to Your Leavening Ingredients. Baking powder and baking soda are especially important when no eggs contribute to lift. Make sure they’re fresh, measure them accurately, and don’t make substitutions between the two unless the recipe specifically allows it.
Follow the Recipe Before Making Substitutions. Changing the flour, fat, liquid, sugar, and egg-replacing ingredients at the same time can completely change the structure of an eggless recipe. I recommend making the recipe as written the first time, then experimenting once you know how the original should turn out.
