Cooking without onion and garlic is part of everyday life in my kitchen, so these recipes aren’t simply dishes where I’ve left those ingredients out. They are developed to be flavorful without relying on onion or garlic in the first place. You’ll find Indian curries, paneer recipes, dals, rice dishes, breakfast and snack ideas, along with global favorites such as pasta, soups, salads, and more.

However, please note that no-onion, no-garlic cooking is not necessarily the same as Jain cooking. Some recipes in this collection may include ingredients that aren’t suitable for a strict Jain diet, but many can be easily customized with simple substitutions. How To Make Flavorful Food Without Onion and Garlic

You don’t need onion and garlic to make flavorful food. Since I cook without them every day, I rely on other ingredients and simple cooking techniques to build layers of flavor instead.

For Indian recipes, ingredients such as ginger, tomatoes, cumin seeds, hing (asafoetida), fresh and dried herbs, whole and ground spices, yogurt, nuts, and seeds can add plenty of depth and richness. Depending on the recipe, roasting spices, cooking tomatoes properly, or adding a flavorful tadka can make a big difference.

For global recipes, I use ingredients such as fresh herbs, spices, roasted peppers, tomatoes, lemon or lime juice, cheese, nuts, seeds, and flavorful homemade sauces. Ingredients vary from recipe to recipe, but the goal is always the same: to create a well-balanced dish that doesn’t feel like anything is missing.
