About Roasted Zucchini
These roasted zucchini bites are tender but not watery and mushy. I baked it at a high temperature for 20 minutes, making a perfectly roasted zucchini. Also, it is nicely golden brown around the edges.
I have used different seasonings to make it flavorful. For instance, I seasoned it with za’atar seasoning and, after baking, sprinkled some chaat masala for an Indian flavor.
Za’atar spice is a blend of a few herbs and spices, and so I like to use it for roasted vegetables. However, if you do not have this spice blend, you can add the spices and herbs of your choice.
Instead of za’atar, add ground cumin, ground coriander, oregano, and ground sumac. Or season it with Italian seasoning or add some fresh herbs of your choice. But the right and a good amount of seasoning is the game changer for this recipe.
I love zucchini, and I use it for different dishes. Because it is mild tasting, it blends well in many recipes, from savory to sweet dishes.

Ingredients
Apart from zucchini, all we need is some herbs and spices. I like to season the zucchini my favorite way, but you can definitely season it with your choice of spices and herbs.
This recipe is a kind of fusion recipe with middle eastern and Indian flavors. I have used the za’atar spice blend because it simply adds many flavors. And toppings of chaat masala and chopped fresh coriander leaves are my favorite Indian flavors for roasted vegetables.
The herbs and spices I have used are:
- Sea salt: Use regular salt instead and adjust it as per taste.
- Ground black pepper: A generous sprinkle of freshly ground black pepper enhances the flavors.
- Dried red chili flakes: Makes the dish spicy, but add it less or more according to your taste preference.
- Za’atar: Adds a lot of flavors to otherwise bland zucchini.
- Fresh coriander leaves: It is my favorite, but you can add fresh mint, oregano, basil, or any fresh herb you choose.
- Chaat masala: If not using chaat masala, add a bit of extra salt and pepper.
How To Make Roasted Zucchini
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and dry the zucchini.
- Cut each zucchini into 1-inch pieces and place them in the large mixing bowl.
- Toss the zucchini with olive oil, salt, black pepper, dried red chili flakes, and za’atar.
- Spread the zucchini pieces evenly on the prepared baking sheet.
- Bake them in the oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven and transfer to a serving dish.
- Give the yogurt a good stir to loosen it slightly, and drizzle it on top of the baked zucchini.
- Sprinkle chopped coriander leaves and chaat masala.
- Serve immediately.

- While roasted zucchini itself tastes delicious, adding some garnish will bring it to the next level.
- Instead of yogurt, you can also drizzle some sour cream on the top.
