I try to eat an apple daily, but sometimes, I want to skip it because I am bored. On such a day, I decided to munch on an apple differently.
I added corn and seasoned it with salt, pepper, and lime juice to make it more filling and enjoyable. My husband and I loved it, and next time, I added baby spinach to make it healthier. I added more seasonings, and this salad instantly became our favorite.
This straightforward salad recipe comes together in 10 minutes. Apple and Corn Salad is great as a side dish or for a quick snack during a mid-day hunger pang.

Ingredients and Notes
- Apples: I have used crisp, sweet, and sour Gala apples, but use the apples you love eating. Also, I don’t peel the apples for this salad; I wash, core, and chop them. But you can remove the skin if you want. Chop the apples at the end to prevent them from browning, or after chopping, squeeze some lime juice and toss to prevent the apples from browning.
- Corn: I boil frozen corn according to the package instructions. But we can also use fresh corn and either grill or cook it.
- Bell Peppers: You can use any color bell pepper you like. You can also add other veggies, cherry tomatoes, and cucumber.
- Baby Spinach: Baby spinach is my favorite green, and I love to pair it with apple and corn. But we can also use other greens like spring mix or baby kale. If you like, add some lettuce for a crunch.
- Chaat Masala: Chaat masala adds a delicious zing to any fruit salad or dish. We love sprinkling some on certain fruits and fruit dishes, so I added some to this salad. But if you don’t have Chaat masala, skip it and adjust salt, pepper, and lime juice to your taste.
- Paneer or Goat Cheese: Both are my favorite, and I usually have them in my fridge. So, to add some creaminess, I garnish the salad with crumbled Paneer or Goat cheese. You can also use Feta cheese or any other cheese of your choice. However, skip it if you want to keep your salad vegan. Adding any cheese is optional; the salad will taste delicious even without it.
How To Make Apple and Corn Salad
Nothing is more comfortable than making this delicious salad. In 10 minutes, we can prepare it, and a perfect, healthy side dish will be ready in no time.
Boiling corn is optional; however, I like to cook it rather than eat it raw.
First, boil the corn, let it cool, and chop bell peppers, spinach, and apples.
Once the corn has cooled, combine everything in a large mixing bowl, add seasonings, and toss well. Your salad is ready!
Serving and Storing Suggestions
We can serve this salad immediately or cover it tightly and keep it in the fridge until serving time.
When ready to serve, add some cheese if you want to.
You can also squeeze some more lime juice if you prefer to.
This salad can be kept in the fridge, tightly covered, for up to two days. But it is best served on the same day it is made.
The next day, the apples will change color, which you might not like. However, the taste will not change even on the next day.

Paneer or Goat Cheese: Crumbled paneer or cheese makes the salad creamy and delicious. For a vegan diet, simply leave it out.

Apple and Corn Salad / Easy Apple Salad
Ingredients
- 3 cups boiled corn (fresh or frozen)
- 2 apples cored and chopped
- 2 cups baby spinach chopped
- 1 bell pepper chopped
- 1 tablespoon olive oil
- 3 – 4 tablespoon lemon or lime juice (or to taste)
- Salt to taste
- Freshly ground black pepper to taste
- ½ teaspoon chaat Masala powder
- ¼ teaspoon cayenne pepper (optional)
