I love how the air fryer makes it easy to roast vegetables quickly. While air frying, in between, we just need to shake the basket a couple of times and continue doing other kitchen chores.
I also realized that I roast and eat vegetables more often after having an air fryer. If you have just started using an air fryer and are not sure where to start, this recipe is for you!
While zucchini fries are quite popular, this recipe makes a mini version. To make the zucchini flavorful and crisp, I like to add breadcrumbs and chickpea flour. The recipe is easy, as we do not need to coat the chunks with the flour slurry and breadcrumbs.
Making the Air Fryer Zucchini is highly customizable and you can make it your own recipe. Use your choice of spices and herbs, or omit something you do not like or have it.

- Salt and Pepper: Add to taste. Zucchini is bland, so it is essential to season it well. After air-frying the zucchini, sprinkle more salt and pepper if necessary.
- Dried Herbs: I used dried oregano and basil. But feel free to season the zucchini with your favorite dried herbs.
- Chili Flakes: Red pepper flakes add some heat to the dish. You can skip them or add them to taste.
- Sumac: Sumac adds a slight tanginess to air fryer zucchini. It is my favorite ingredient, and so I like to include it in salads and stir-fried vegetable dishes. But it is optional and feel free to skip it.
How To Make Air Fryer Zucchini
- Trim off the ends of the zucchini and cut into ¾ -inch chunks.
- Transfer the zucchini chunks to a medium mixing bowl.
- Add oil, breadcrumbs, chickpea flour, salt, pepper, chili flakes, sumac, dried basil, and dried oregano.
- Toss well to combine.
- Preheat the air fryer to 400°F.
- Add the seasoned zucchini to the air fryer basket in a single layer.
- Air fry the zucchini at 400°F for 8-10 minutes, shaking a couple of times, until the breadcrumbs are golden and the zucchini is tender but not mushy.
- Or, air fry the zucchini until you reach the desired tenderness.
- Transfer the air fryer zucchini to a serving plate and enjoy!
