Air Fryer Zucchini is an incredibly easy-to-make side dish with satisfying comfort and flavors. This recipe here gives you perfectly air-fried zucchini chunks with spices and herbs!
Trim off the ends of the zucchini and cut into ¾ -inch chunks.
Transfer the zucchini chunks to a medium mixing bowl.
Add oil, breadcrumbs, chickpea flour, salt, pepper, dried basil, dried oregano, sumac, and chili flakes. Toss well to combine.
Preheat the air fryer to 400°F.
Add the seasoned zucchini chunks to the air fryer basket in a single layer. Air fry the zucchini at 400°F for 8-10 minutes, shaking a couple of times, until the breadcrumbs are golden and the zucchini is tender but not mushy.

Breadcrumbs: If you do not have breadcrumbs, you can skip them. Instead, add an extra tablespoon of chickpea flour.
Air Frying: It is best to cook the zucchini in a single layer. Overcrowding the air fryer basket will result in unevenly roasted zucchini. So, if all the zucchini chunks do not fit in a single layer, air fry the zucchini in batches.
Do Not Overcook: Air Fryer cooking time may vary based on your model. It will generally take 7-10 minutes to cook zucchini. But it is safe to check earlier if you get the right texture.
