We need very few ingredients to make Paneer Bhurji, but this sabji is pleasing, satisfying, and flavorful. It is a perfect vegetarian dish packed with protein and calcium.
About Paneer Bhurji
Bhurji means scrambled, and so this dish is all about scrambled Paneer with tomatoes and spices.
I learned this dish from one of my best friends a long time ago when we were in university. I then modified the recipe to make it without onion and garlic as per my family’s taste.
However, I can still feel the essence of our friendship whenever I make Paneer Bhurji. It brings back all the memories spent with special friends.🤗
This sabji is in semi-solid form, and we don’t need to make a gravy. Instead, we will cook finely chopped tomatoes until they are soft, and the tomato mixture will become like a gravy.
Paneer Bhurji No Onion No Garlic is a one-pot or, more specifically, one-pan recipe, which I love about it.

Ingredients
- Paneer or Chhena: Paneer Bhurji is made with scrambled Paneer. But instead of scrambling Paneer, I always make this Sabji with freshly made chhena. Chhena is softer and moist than Paneer, so the Paneer Bhurji melts in the mouth. So, if you make Paneer at home, do not tie and press the chhena; instead, use the freshly made chhena in the recipe. And if you are using homemade or store-bought Paneer, grate it or scramble it, and then use it in the recipe.
- Tomatoes: After Paneer, tomatoes are the next essential ingredient for Paneer Bhurji, which is without onion and garlic. So choose ripe tomatoes and chop them very finely. We are not making tomato puree for this sabji, but once the tomatoes are cooked, they will be soft. The tomatoes will be soft and pulpy, and the tomato mixture will be like a thick gravy.
- Green Pepper: Green pepper adds nutrition, color, and a nice crunch to Paneer Bhurji. However, it is not necessary to use green pepper. Instead of green peppers, we can also use red, orange, or yellow bell peppers.
- Spices: We need our common spices for this recipe. Use green chili less or more, depending on how spicy you want. Also, I have used Kashmiri red chili powder, which gives a nice, vibrant color but is not spicy. Adding sugar is optional, but I will recommend adding at least a pinch. It will enhance the flavors of the dish.
- Cream: Adding cream to this sabji is totally optional, even if I don’t add it every time. Only once in a while, I like to add a tablespoon of cream to Paneer Bhurji. It makes it creamy, rich, and moist.

- It is an excellent protein-packed vegetarian dish and perfect for a healthy and filling breakfast. We can have Paneer Bhurji with a toast of bread.
- For lunch or dinner, Paneer Bhurji goes well with Roti, Paratha, or Naan.

Ingredients
- 1 tablespoon oil
- 1 teaspoon green chili paste (or as needed)
- 1 tablespoon ginger paste or grated ginger
- 3 large tomatoes finely chopped
- 1 Green pepper finely chopped
- 2 Cups freshly made chhena or scrambled Paneer
- Salt to taste
- ¼ teaspoon turmeric powder
- 2 teaspoon Kashmiri red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon Cumin powder
- 1 tablespoon garam masala powder
- ¼ teaspoon sugar
- 1 teaspoon crushed Kasoori Methi (dried fenugreek leaves)
- 2 tablespoon Finely chopped coriander for garnishing
- 1 tablespoon cream (optional)
Instructions
- Heat oil in a pan and add green chili and ginger paste, sauté for a minute.
- Add chopped green pepper, mix well and cook until soft for about a minute.
- Add chopped tomatoes, mix well and continue cooking until tomatoes are soft, pulpy, and mushy.
- Now add turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala powder. Mix well, continue cooking until oil separates from the side and mixture is almost like a thick gravy.
- Add chhena or scrambled Paneer, salt to taste, and sugar. Mix well until everything is well combined.
- Add dried fenugreek leaves, chopped coriander, and mix well. Add a tablespoon of cream if you prefer to, and serve Paneer Bhurji hot with Roti, Paratha, Naan or spread it on a toast of bread.
