Green Beans Stir Fry with Coconut│Beans Poriyal is a healthy and delicious dish. This green beans sabji has south Indian flavours and is very easy to make. The recipe is very simple and very few ingredients are needed. In this recipe green beans are stir fried and mixed with fresh coconut and spices. This dish can be served with Roti or as a side dish with rice.
Green Beans Stir Fry with Coconut│Beans Poriyal:
Green Beans: Green beans are also known as French beans and string beans. It is always good to have tender and fresh beans for this recipe. If beans are tender, they cook faster and tastes very fresh. But if beans are not tender, cooking time might be longer.
Coconut: For me it is hard to find fresh coconut. But I always keep freshly grated frozen coconut in my freezer. Once it is thawed, it is tender and same as fresh. So I have used frozen coconut in this recipe. Do not use desiccated coconut. However, you can either increase or reduce the amount of coconut, as per your desire.
Tempering: In this recipe, tempering of mustard seeds and urad dal gives nice south Indian flavours. So try not skipping any of this.
Poriyal means sautéed or stir fried veggies with spices. Other than green beans, poriyal can be made with many other veggies, like carrot, cabbage, beetroot, etc. Green Beans Stir Fry with Coconut is easy and simple recipe but it is healthy, flavorful and delicious.

Green Beans Stir Fry with Coconut
Ingredients
- 400 gms Green beans ((French beans))
- ½ Cup grated fresh coconut
- 2 tablespoon oil
- 2 Red dry chillies
- 1 tablespoon urad dal ((split black grams))
- 1 teaspoon mustard seeds
- ½ teaspoon asafoetida / Hing
- Salt to taste
- 1 teaspoon red chilli powder
- 1 & ½ teaspoon Sambar powder
- Coriander leaves finely chopped for garnishing
Instructions
- Rinse green beans thoroughly with water and cut the edges from both sides. Chop the beans into ¼ inch long pieces. Set aside.
- Heat oil in a pan and add red dry chillies and mustard seeds. After mustard seeds start crackling, add urad dal and asafoetida. Sauté for few seconds or until urad dal starts getting golden brown.
- Then add washed, drained and chopped beans, mix well. Add salt to taste and 2tbsp water. Mix and cover the pan with lid and keep the flame on low to medium. Let it cook until beans are soft, tender and cooked thoroughly. Make sure to stir in between. Cooking time will be anywhere between 15-20 minutes, depending on the type of beans.
- Once beans are cooked, add chilli powder and sambar powder. Mix well and add grated coconut. Mix and let it cook for a minute. Adjust salt, if needed. Garnish with chopped coriander and serve hot with Roti.
