No Bake Chocolate Digestive Cookie Bars
Making these chocolate digestive cookie bars is quick; everything comes together in 20 minutes. This recipe is my favorite, and it comes in handy when preparing something quickly for a potluck or get-together.
Here, I have shared the small batch recipe using a 6-inch pan. But if you want to make bars in a larger quantity, you can scale up the ingredients and use the 9-inch or 9×13-inch pan to set the mixture.
These cookie bars are excellent for Christmas holidays or small celebrations. This recipe is great fun if you like to prepare something with your kids for the holidays!
The bars are not too sweet, as the digestive cookies are mildly sweet. I have also not used sugar in the recipe. Cookie bars are perfectly sweetened to our taste, but if you prefer them sweeter, add 2-3 tablespoon of powdered sugar to the cream and chocolate mixture.
If you are not a fan of digestive cookies or do not have them, you can use other biscuits. I recommend Biscoff biscuits, Graham crackers, or Marie cookies.
This recipe used chopped chocolate bars, but chocolate chips can also work. You can use semi-sweet, dark, or milk chocolate, depending on your preference.

- Digestive Biscuits: Use good-quality digestive biscuits or your favorite brand of digestive cookies for these bars. Break the cookies into chunks with your hands.
- Butter: Use unsalted butter and bring it to room temperature before using it for the recipe. If you use salted butter, skip adding the salt.
- Whipping Cream: Use whipping or heavy cream with at least 35%.
- Vanilla: I like to flavor these cookie bars with vanilla, but you can skip it.
- Sea Salt: A pinch of salt enhances the flavors of this dessert. However, you can skip it or top the bars with sea salt flakes.
How To Make Chocolate Digestive Cookie Bars
- Prepare a 6-inch square baking pan by lining it with the parchment paper.
- Break the digestive cookies into small-medium chunks in a medium bowl and set it aside.
- Place the chopped chocolate, butter, salt, and vanilla in another medium bowl.
- Heat cream in a thick-bottomed pan and bring to a boil.
- When it starts to boil, turn off the heat and pour the cream over the chocolate and butter.
- Whisk to combine everything well and to achieve a smooth batter.
- If your chocolate does not melt and you can not get a smooth consistency, heat the bowl in the microwave for 15-20 seconds.
- Do not overheat.
- Stir again to mix everything in a smooth batter.
- Fold in the digestive cookie chunks.
- Transfer the chocolate and cookie mixture to the prepared baking pan and spread evenly.
- Cover the pan with a plastic wrap and refrigerate for at least 4 hours or until it sets completely.
- Once the fudge is set, remove it from the pan and slice it carefully into bars of desired size.
- Serve the bars immediately or keep them in the fridge.
- Sliced Chocolate Digestive Cookie Bars can be refrigerated in an airtight container for 8-10 days.
