Chocolate Digestive Cookie Bars (Small Batch)

These Chocolate Digestive Cookie Bars are no-bake, incredibly easy, and quick to make. They are super chocolatey, loaded with digestive cookies, and taste amazingly delicious!

Ingredients
  

  • 120g digestive cookies
  • 225g semi-sweet chocolate chopped
  • ¼ cup (57g) unsalted butter, softened or melted
  • 100 ml whipping cream
  • A pinch of sea salt (optional)
  • ½ teaspoon vanilla

Instructions
 

  • Prepare a 6-inch square baking pan by lining it with the parchment paper.
  • Break the digestive cookies into small-medium chunks in a medium bowl and set it aside.
  • Place the chopped chocolate, butter, salt, and vanilla in another medium bowl. It is essential to bring the butter to room temperature or melt it before using it for the recipe.
  • Heat cream in a thick-bottomed pan and bring to a boil. When it starts to boil, turn off the heat and immediately pour the cream over the chocolate and butter.
  • Whisk to combine everything well and to achieve a smooth batter. Fold in the digestive cookie chunks.
  • Transfer the chocolate and cookie mixture to the prepared baking pan and spread evenly. Cover the pan with a plastic wrap and refrigerate for at least 4 hours or until it sets completely.
  • Once the fudge is set, remove it from the pan and slice it carefully into bars of desired size. Serve the bars immediately or keep them in the fridge.
  • Sliced Chocolate Digestive Cookie Bars can be refrigerated in an airtight container for 8-10 days.

Notes

  1. Chocolate: You can use either chocolate chips, chunks, or chopped chocolate bars. You can also use dark or milk chocolate instead of semi-sweet chocolate.
  2. Digestive Cookies: Use good quality or your favorite brand of cookies. Crush the cookies with your hands into chunks, but do not crush them to a coarse or fine powder.
  3. Butter: If you use salted butter, skip the salt from the recipe. The butter should be soft or melted; otherwise, it will not be mixed into the chocolate mixture.
