Simple Cucumber Tomato Salad is easy to make, flavorful, light, cooling, and absolutely refreshing! This classic salad consists of diced cucumbers, tomatoes, turnip slivers, and optional bell peppers, and it does not require a store-bought salad dressing.
Combine all the ingredients except cilantro in a mixing bowl. Toss well until everything is well combined.
Add finely chopped cilantro and toss well. Let the salad sit at room temperature or refrigerate for at least 10 minutes before serving.
Storing Suggestions
It is best to serve this salad the same day it is made. Cover it tightly and refrigerate until you are ready to serve.
However, if you still need to keep it longer or have leftovers, cover it tightly and place it in the fridge for up to two days. There will be lots of juice released, which you can remove before serving.
Notes
Cucumber: If you are using a cucumber with many seeds, cut the cucumber lengthwise, remove the seeds, and then chop the cucumber.
Tomatoes: Do not use very soft or mushy tomatoes for the Salad.
Make-Ahead: You can make the simple cucumber tomato salad ahead of time if necessary. Cut the vegetables and store them in the refrigerator. Add the seasonings and toss well when you are ready to serve.
Scaling: You can easily double, triple, or halve the recipe as needed.
