This Jelly Donut in a Mug is light, moist, and fluffy, with the center filled with strawberry jam! It is easy to make in less than five minutes and tastes just like a bakery jelly donut.

Ingredients
  

  • 2 tablespoon (28g) unsalted butter
  • 2 tablespoon (25g) granulated sugar
  • ¼ cup (30g) all-purpose flour
  • ½ teaspoon baking powder
  • A pinch of salt
  • ¼ teaspoon ground cinnamon
  • 3 tablespoon 45ml milk
  • ¼ teaspoon vanilla extract (optional)
  • 1 tablespoon strawberry jam (plus more for topping)

Instructions
 

  • Place the butter in a medium to large microwavable mug and microwave until just melted, about 25 seconds.
  • Add sugar to the melted butter and mix well with a fork. Add the flour, baking powder, salt, cinnamon, vanilla, and milk and mix until just combined and smooth.
  • Place 1 tablespoon of the jam into the center of the batter.
  • Microwave for 60 seconds or until risen and firm on top. Depending on the type of microwave, the cooking time may vary from 60 seconds to a little more than a minute. So, it is best to watch the mug while it is in the microwave to avoid overcooking.
  • Allow the doughnut in the mug to cool for 8-10 minutes. Top it with cinnamon sugar and more jam if desired, and enjoy!

Notes

  1. Mug: A medium to large mug is fine for this recipe. However, try to use at least 12-14oz mug.
  2. Measuring The Ingredients: If you have a kitchen scale, weigh the ingredients for the best result.
  3. Cooking The Jelly Donut: Do not overcook this Jelly Donut in a Mug. Start with 60 seconds, then cook for 10-20 seconds as necessary.
