2 tablespoon (28g)unsalted butter
2 tablespoon (25g)granulated sugar
¼ cup (30g)all-purpose flour
½teaspoonbaking powder
A pinch of salt
¼teaspoonground cinnamon
3tablespoon45ml milk
¼teaspoonvanilla extract(optional)
1tablespoonstrawberry jam(plus more for topping)
Instructions
Place the butter in a medium to large microwavable mug and microwave until just melted, about 25 seconds.
Add sugar to the melted butter and mix well with a fork. Add the flour, baking powder, salt, cinnamon, vanilla, and milk and mix until just combined and smooth.
Place 1 tablespoon of the jam into the center of the batter.
Microwave for 60 seconds or until risen and firm on top. Depending on the type of microwave, the cooking time may vary from 60 seconds to a little more than a minute. So, it is best to watch the mug while it is in the microwave to avoid overcooking.
Allow the doughnut in the mug to cool for 8-10 minutes. Top it with cinnamon sugar and more jam if desired, and enjoy!
