Ingredients

  • 200g dried figs
  • 100g raw cashews (roughly chopped)

Instructions

  • In a medium heatproof bowl, take the dried figs. Pour hot water into the bowl and soak the figs for 15 minutes.
  • Drain the water completely and place the soaked figs into the food processor fitted with an S-shaped blade. Process until figs are finely chopped.
  • Add chopped cashews and ground cardamom. Process until everything combines, sticks together, and becomes almost like a dough.
  • Cashews will not be ground completely, but that is fine. The small cashew pieces will add crunch to the energy balls.
  • Scoop the dough with using a tablespoon and form it into small balls using your hands.
  • If it is too sticky and hard to form balls, lightly grease your palm with coconut oil or any other neutral oil.
  • Enjoy the fig energy balls immediately, or store them in an airtight container.
