Ingredients
2tablespoonoil or ghee
1teaspooncumin seeds
7-8curry leaves
2teaspoongreen chili paste or to taste
1tablespoonginger paste or to taste
4medium potatoes boiled, peeled and diced
Rock salt to taste(Sendha Namak / Pink Salt)
¼cupcrushed unsalted and roasted peanuts(Moongfali / Singdana)
Lemon juice to taste
1teaspoonSugar
2tablespoonfinely chopped coriander leaves
Instructions
Heat oil in a pan or Kadai and add cumin seeds. Allow cumin seeds to sizzle. Instead of oil, you can also use ghee.
Add curry leaves, green chili, and ginger paste. Mix well and saute for a few seconds.
Then, add boiled potatoes and mix everything well. Cook the potatoes on medium heat, stirring occasionally, for 5-6 minutes.
Add salt, peanuts, and sugar. Mix well and cook for 2-3 minutes on low-medium heat. Adding sugar is optional, and you can skip it.
Finally, add chopped coriander leaves and lemon juice. Stir well and turn off the heat. Transfer the Sabji to a serving bowl and serve hot.
