Farali Aloo Sabji / Farali Potato and Peanut Bhaji

Ingredients
  

  • 2 tablespoon oil or ghee
  • 1 teaspoon cumin seeds
  • 7-8 curry leaves
  • 2 teaspoon green chili paste or to taste
  • 1 tablespoon ginger paste or to taste
  • 4 medium potatoes boiled, peeled and diced
  • Rock salt to taste (Sendha Namak / Pink Salt)
  • ¼ cup crushed unsalted and roasted peanuts (Moongfali / Singdana)
  • Lemon juice to taste
  • 1 teaspoon Sugar
  • 2 tablespoon finely chopped coriander leaves

Instructions
 

  • Heat oil in a pan or Kadai and add cumin seeds. Allow cumin seeds to sizzle. Instead of oil, you can also use ghee.
  • Add curry leaves, green chili, and ginger paste. Mix well and saute for a few seconds.
  • Then, add boiled potatoes and mix everything well. Cook the potatoes on medium heat, stirring occasionally, for 5-6 minutes.
  • Add salt, peanuts, and sugar. Mix well and cook for 2-3 minutes on low-medium heat. Adding sugar is optional, and you can skip it.
  • Finally, add chopped coriander leaves and lemon juice. Stir well and turn off the heat. Transfer the Sabji to a serving bowl and serve hot.
