Fig Energy Balls / Sugar-Free Fig and Cashew Balls
These Fig Energy Balls are sweet but sugar-free, dairy-free, nutty, healthy, and delicious. In addition, they are incredibly easy to make and require only two main ingredients and optional cardamom.

In a medium heatproof bowl, take the dried figs. Pour hot water into the bowl and soak the figs for 15 minutes.
Drain the water completely and place the soaked figs into the food processor fitted with an S-shaped blade. Process until figs are finely chopped.
Add chopped cashews and ground cardamom. Process until everything combines, sticks together, and becomes almost like a dough.
Cashews will not be ground completely, but that is fine. The small cashew pieces will add crunch to the energy balls.
Scoop the dough with using a tablespoon and form it into small balls using your hands.
If it is too sticky and hard to form balls, lightly grease your palm with coconut oil or any other neutral oil.
Enjoy the fig energy balls immediately, or store them in an airtight container.
