It can be customized in many ways as per your family’s preferences. Rice, black bean mixture with veggies and spices, and avocado sauce, this dinner is definitely something you will look forward to with your family.
Vegetarian Burrito Bowl with Avocado Sauce:
Mexican food is my family’s favorite. Burritos, Quesadilla, and Tacos are often made meals in my kitchen. My hubby and I really enjoy this burrito bowl. While my son still wants bean mixture wrapped in a soft tortilla.
I have used long-grain rice for this burrito bowl. Use your choice of rice; however, I would recommend a long-grain variety.
The avocado sauce is just too good. It is very simple to make. I have added sour cream, green chili, lime juice, salt, and black pepper. Green chili is totally optional. Also, use plain yogurt instead of sour cream if you want. This sauce adds more flavor and moisture to this burrito bowl.
I love this hearty meal so much, and I couldn’t stop myself from sharing it with you. Black bean mixture is very easy to make. I have used my Homemade Taco Seasoning; however, you can use your favorite taco seasoning. Because we do not eat onion and garlic, I always keep my taco seasoning ready. It really makes life easy and helps to make dinner quickly.
Taco seasoning is really necessary for this recipe. If you do not have one without onion and garlic, try this Homemade Taco Seasoning. It is really easy to make. If you don’t want to make it, check the recipe for ingredients. And add all the ingredients individually into the black bean mixture as per your taste.
In this recipe, I have used bell peppers in the bean mixture. But other veggies of your choice can also be added. If you are using canned beans, make sure to drain and rinse properly before using.
For serving, add baby spinach or lettuce to this bowl. On top of everything, add avocado sauce generously.
You can use many garnishes for this burrito bowl. Add cheese of your choice. Also, use salsa and sour cream if desired.

Vegetarian Burrito Bowl with Avocado Sauce
Ingredients
For Rice:
- 1 Cup long grain rice ((or rice of your choice))
- 1 teaspoon salt
For Black Bean Mixture:
- 2 teaspoon olive oil or any cooking oil
- 1 Jalapeno pepper finely chopped
- 2 Bell pepper of any color, (diced)
- 3 Cups boiled black beans or 2 cans ((398ml each) black beans, drained & rinsed)
- ½ Cup water
- 2 -3 tablespoon Homemade Taco Seasoning No Onion No Garlic
- Salt to taste
- ¼ Cup finely chopped coriander
- 1 Lime juiced
For Avocado Sauce:
- 1 Large avocado (pitted)
- 1 Green chilli ((optional))
- ⅓ Cup sour cream or plain yogurt
- Salt to taste
- Freshly ground black pepper
- 1 tablespoon lime juice
For Garnishing:
- 2 Cups shredded baby spinach or lettuce
- 1 Cup shredded cheese
- Sour cream
Instructions
For Rice:
- Cook rice in water with salt as per the instruction on the package of rice you are using. Make sure that rice is not mushy and sticky. Set aside.
For Black Bean Mixture:
- In a pan or skillet add olive oil and jalapeno pepper and heat on medium flame. Then add diced bell pepper and cook for 2 minutes.
- Add drained black beans, mix and add ½ cup of water. Add Homemade Taco Seasoning No Onion No Garlic, salt to taste and mix well. Let this mixture cook for few more minutes. Add coriander and lime juice, mix well. Taste and add more taco seasoning and salt if needed. Mix and turn off the heat.
For Avocado Sauce:
- Add all the ingredients of avocado sauce into food processor or blender and blend until smooth. Taste and adjust salt or lime juice if needed.
- For serving, divide rice in to individual bowls. Top each with black bean mixture and avocado sauce. Garnish with shredded baby spinach or lettuce, shredded cheese and sour cream. Or add any garnishes of your choice.
