Fada Lapsi is one of the most well known Gujarati desserts. We make it on many occasions, from festival to Puja (sacred or holy rituals). This Lapsi is very delicious as well as it is very nutritious. We need very few ingredients to make this aromatic and rich flavoured dessert. It is easy to make but making in pressure cooker is just so effortless.
Fada Lapsi:
What is Fada: Fada is broken wheat and other well known name is Dalia. It is highly nutritious and does not go under refining. Also it is healthier than rice or other grains. It is rich in iron, fibre and other minerals.
Fada Lapsi is very popular in Gujarat. It is made on special occasions and auspicious days. I have learnt this recipe from my mom and making it in pressure cooker is my go to recipe.
My family loves this Lapsi and so I do not wait for any occasion. It is definitely a healthier dessert and is super filling. Since broken wheat has nutty flavour and chewy texture, that is how this Lapsi will be. Roasting Dalia in Ghee will provide rich aroma and addition of cardamom will enhance the flavour.
Add ins: I like to use only almonds in this recipe. But we can also add other nuts like cashews. Also some prefer to add raisins. So you can add as per your choice. Also sometimes I add saffron which gives nice bright color and flavour to this Lapsi.
Ingredients: We need very few ingredients for this recipe. I have used 3tbsp of Ghee which is perfect for my family. But if you prefer more Ghee, feel free to add 2-3 tablespoon more Ghee than mentioned in recipe. Also rather than adding more Ghee in the beginning, add 1-2 tablespoon Ghee at the end with sugar and cardamom.
I have used cane sugar in this recipe and it is ½ cup and it makes this Lapsi just moderately sweet. So again if you prefer your dessert on more sweet side, add more sugar, maybe 2 to 3 tablespoon more. Also it is very important to add sugar at the end, after pressure cooking.
Roasting: Roasting Dalia into Ghee to make this Lapsi is very important. Roasting in Ghee will make broken wheat light and will release nice aroma. Also it will help in cooking. Roast it on medium low heat. High heat will make Dalia too much brown and give burning flavour. I roast for 8-10 minutes on low flame and stir continuously, so it does not change much color even after enough roasting. So you will see in picture the Fada Lapsi I make is still light in color and not too dark.
Why Soaking before Pressure Cooking:
I found that roasting Fada and then pressure cook right away, does not make each grain fully puffed up. So I like to soak for a while after roasting and before pressure cook. Also it helps in time management. If I am planning to make Lapsi for dinner, I simply roast and soak it before leaving to work. And pressure cook before dinner and have hot, delicious Lapsi ready at dinner time.
Even soak it for only an hour if possible, otherwise cooking it right away is fine too. That is how my mom makes it, but soaking is my version of this Lapsi. So believe me soaking or not soaking, you will still have delish and quick Lapsi in your plate.

How To Make Fada Lapsi in Pressure Cooker:
Take Ghee into pressure cooker.
Turn on heat and melt Ghee.
Once Ghee is melted, add broken wheat (Dalia).
Mix well and roast broken wheat in Ghee on medium low flame, stirring continuously.
Roast it for 8-10 minutes (stirring continuosly) or until broken wheat is light and starts changing color and Ghee starts to separate.
Now add almond slivers and mix, continue stirring and cooking for a minute more.
Then turn off the heat and add 3 cups of water.
Mix well and cover the pressure cooker with the lid.
I like to rest it for at least 2 hours or up to 6 hours before pressure cooking. This way Fada Lapsi becomes very fluffy and each grain is big as it soaks water. But this step is optional, you can skip it and move onto next one.
Cook the Lapsi in pressure cooker on medium heat for 3-4 whistles. Let the cooker cool down until steam is released. Dalia will soak all the water.
Heat the cooker again on low heat and add sugar and cardamom powder.
Mix well until sugar is completely dissolved, for a minute only. Turn off the heat.
Take Fada Lapsi into serving bowl, garnish it as you wish and serve hot.
