Black Bean Quesadillas are my one of the favorite food for so many reasons. These cheesy quesadillas are packed with black beans, which are high in protein and low in fat. It is super easy to make and done under 30 minutes. Perfect for busy evenings and when you are lazy to spend hours in the kitchen. This hearty meal is very filling and satisfying.

Mexican food is my family favourite and after posting Vegetarian Burrito Bowl, I was looking forward to post this recipe. I have used black beans from can which is organic and low in sodium. But you can also cook black beans at home. Soak in water for 8 hours and then pressure cook until completely cooked.
Along with black beans I have added chopped bell peppers. But other veggies or greens can also be used if you desire.
The dish is made with simple ingredients and simple spices but provides bursting flavours. Use your choice of flour tortillas; I have used whole wheat to make it healthier.
Serve Black Bean Quesadillas with Avocado dip, salsa or sour cream. Hope you will like this simple but delicious recipe.

Black Bean Quesadillas
Ingredients
- 1 tablespoon oil
- ½ Jalapeno pepper or 1green chilli finely chopped
- 1 & ½ Cup bell pepper finely chopped
- 3 Cups black beans cooked
- ½ cup water
- Salt to taste
- Freshly ground black pepper to taste
- 1 teaspoon red chilli powder
- 1 – 2 teaspoon Paprika powder ((add as needed))
- 1 tablespoon cumin powder
- ½ teaspoon dried oregano
- ½ Lime juiced
- 2 tablespoon coriander finely chopped
- 4 Large whole wheat tortillas
- 1 Cup shredded cheddar cheese or Tex Mex cheese
Instructions
- Heat oil in a pan and add chopped jalapeno, bell peppers and sauté for 2 minutes.
- Add black beans and ½ cup of water, mix well. Add salt, black pepper, red chilli powder, paprika powder, cumin powder and dried oregano. Mix and let it cook for few minutes or until water is absorbed and everything is well combined.
- While cooking this mixture, with the back of spoon lightly mash it. Then add lime juice and chopped coriander, turn off the heat. Set this black bean mixture on side.
- Heat the frying pan or skillet on medium heat. Place tortilla on this and Cook on one side until lightly golden. Take this tortilla on the plate.
- Now on the half side of tortilla which is cooked and golden, spread black bean mixture and sprinkle cheese on it. Fold the other empty half of tortilla on the mixture to enclose the filling.
- Add very little oil on the frying pan or skillet and place prepared quesadilla on it. On low to medium heat cook this quesadilla until lightly golden and crispy. Flip the quesadilla very gently with spatula and cook on other side until golden, crispy and cheese is melted. Transfer immediately from the pan and place on cutting board.
- Let it cool for a minute and then cut with sharp knife or pizza cutter in 2 or 3 slices. Cook other quesadillas the same way.
- Serve quesadillas hot with avocado dip, sour cream or salsa.
