Baked donuts are something I adore a lot. They are very light compared to fried donuts. And the best part is that they are super quick to make. The baked donuts recipe comes together in just a few minutes, and you can instantly have them whenever you crave them.
We do not need any egg replacer or binding agent to make these donuts. All we need are some basic ingredients, readily available in our kitchen, and yummy donuts are ready.
I have adapted this recipe from my Baked Vanilla Donuts (Eggless). My family and friends love baked donuts, so I always try to make different flavors. I have also posted a few more baked donut recipes already.
A ripe banana in these donuts adds flavor and makes them super moist. Moreover, I have topped the donuts with a chocolate glaze. And what could be better than a banana and chocolate combo, right?

- All-Purpose Flour: I have used unbleached all-purpose flour, and I will recommend using the same. However, if you want, you can swap half of the all-purpose flour with whole wheat flour.
- Baking Powder and Baking Soda: They are essential for light and fluffy donuts.
- Salt: It adds a nice contrast to the sweetness.
- Sugar: I have used light brown sugar, but you can use the same amount of dark brown sugar or white granulated sugar.
- Milk: Use whole or full-fat milk for the best texture and taste. However, you can use 2% fat milk but do not use fat-free milk.
- White Vinegar: It makes the donuts light and fluffy. Instead of white vinegar, apple cider vinegar can be used.
- Butter: It adds a delicious buttery flavor to the Baked Banana Donuts. We have not tried this recipe using oil.
- Vanilla: Use pure vanilla for the best flavors.
- Banana: One medium-ripe banana is all we want. You can mash the banana if you do not want to blend the banana and milk. And then, add the milk separately to the wet ingredients.
- Chocolate Glaze: I have used semi-sweet chocolate to make the chocolate glaze. However, you can also use semi-sweet chocolate chips. Other than chocolate, we need heavy cream and butter to make this silky, shiny, and delicious chocolate glaze.
Step-by-Step Directions
Making The Batter
- Preheat the oven to 350° F.
- Grease the donut pan with nonstick oil spray or with melted butter. Set aside.
- In a blender jar, add ripe banana and milk. Blend into a smooth puree. Set aside.
- Whisk flour, baking powder, baking soda, and salt in a mixing bowl until well combined.
- Whisk melted butter, sugar, and vanilla in another bowl until just combined.
- Add banana puree and vinegar.
- Whisk well to combine.
- Pour the wet ingredients into the dry and mix until well combined but do not overmix.
Baking The Donuts
- Fill the batter into a large piping bag; there is no need for a tip.
- Cut the end of the piping bag and pipe the batter into the donut pan evenly up to ¾ way.
- Do not overfill, as these donuts will rise well.
- Bake the donuts in the preheated oven for 10 minutes or until the edges are lightly brown.
- Do not overbake.
- Remove from the oven and allow the donuts to cool down in the pan for 2 minutes.
- Then transfer the donuts onto a wire rack and let them cool completely.
Glaze The Donuts
- Take the chopped chocolate or chocolate chips in a heatproof bowl or saucepan.
- Add heavy cream and butter.
- Melt the chocolate using a double boiler method.
- Alternatively, you can melt the chocolate using a microwave-safe bowl. Melt the chocolate in the microwave in 15 seconds increments, stirring after each time until completely melted and smooth.
- Dip the tops of the donuts into a chocolate glaze, and place them back onto a cooling rack to set.
- The glaze will be set in 10-15 minutes.
Storing Suggestions
- Baked Banana Donuts are best eaten the same day. However, they can be covered tightly and stored at room temperature for two days. And in the fridge for up to four days.
- Allow the glaze to set completely before stacking the donuts into the container.
- Keep the donuts away from the warm place; otherwise, the chocolate glaze may start melting.
Variations
Spices: You can add spices to the dry ingredients, such as nutmeg, ground cinnamon, or ground cardamom.
Nuts: Incorporate nuts into batter, like toasted walnuts or pecans. However, chop them very finely before adding them to the batter.
Glaze: Instead of chocolate glaze, top the donuts with sugar glaze or your choice of glaze.
Toppings: Add some sprinkles or chopped nuts on the tops right after glazing the donuts.
