Difference Between Almond Meal and Almond Flour
Almond Meal: It is prepared from whole raw and unpeeled almonds. Almond meal is generally coarsely ground and crumbly. You will see brown specks into an almond meal due to the almond skin.
Almond Flour: It is made from blanched and peeled almonds. Almond flour is finely ground and almost like flour consistency. Because it is made from peeled almonds, it is pale in color and very soft to touch.
We can use either almond flour or almond meal in most recipes. However, if you desire less nutty flavor and tenderness in your baking recipes, use almond flour, which provides a tender and light texture to your baking goods. But if you do not care about brown specks and the more pronounced flavor of almonds, use almond meal.
How To Make Almond Meal
Super easy! All we need is raw almonds and a blender. But we still need to take care of a couple of things.
- Take raw almonds into the blender jar. Do not overfill the jar with almonds.
- Blend the almonds until we reach the fine-textured flour.
- After a few pulses, make sure to shake the blender jar or with a spatula mix the ground almonds. So if there are any clumps of ground almonds at the bottom, we can break them.
- Continue pulsing and mixing in between to release clumps, until we get finely ground almonds.
- Almonds start to release oil very quickly, so make sure to pause after every few pulses.
- The best way is to grind for a few seconds, pause, release ground almond clusters, and continue grinding again for a few seconds.
- Make sure not to go too far otherwise almonds will start turning into butter.
- You can keep the texture of ground almonds as you desire. Either keep it coarse or go with fine texture.
- To make the delicate texture, you can sieve the almond meal with a small pore strainer. So once you sieve, you might get a few pieces of almonds, grind them again. Then strain again and continue until all the almond pieces are ground.
Storing Suggestions
- It depends! Let’s say if you want to use almond meal in your cooking or baking right away or within a week, store it into seal tight container and keep it in a cold and dark place. Probably in your pantry, or you can place it into the fridge, but away from light and heat.
- If you want to keep it for later use or have leftover, store it into seal tight container and place it into the freezer. Take it out from the freezer 15-20 minutes before you use it in the recipe. Let it sit on the countertop and come to room temperature. And then use it in your recipe.

While grinding, make sure to pause, remove the blender or jar from the base, shake it, or mix the ground almonds with a spatula. This step is crucial as there will be almond clumps at the bottom of the blender, and we need to release them before grinding it again.
- Continue grinding for a few seconds, pause, release the clusters, and grind again. Keep doing this procedure until we reach fine-textured flour. The time will be different based on the blender you use.
- We can also sieve the flour and check for the remaining pieces of almonds. And blend those pieces again until all the nuts are blended.
