I still have a habit of having a handful of peanuts when I need a quick and healthy snack. With the same peanuts, we can make this filling but delicious salad or chaat.
This recipe for the Roasted Peanut Salad is vegan and made without onion and garlic. I have added a few vegetables to make it healthier and more nutritious. However, you can add your choice of vegetables and spices to make it your favorite!

- Roasted Peanuts: For this salad, use high-quality, lightly salted, crunchy roasted peanuts. If you do not want to use store-bought peanuts, roast raw peanuts on low heat, stirring continuously, until crunchy. Then, remove the skin and use the peanuts for the recipe.
- Vegetables: I have added finely chopped celery, green pepper, and tomatoes, but you can add other vegetables such as carrots, cucumbers, or red cabbage.
- Green Chili: I have added a small green chili to make the salad mildly spicy. But you can skip it, remove the seeds from the chili, and then finely chop it. Instead of green chili, you can add jalapeno pepper or add more red chili powder.
- Oil: Oil will help coat the spices in peanuts; we need only about a teaspoon. I have used olive oil, but you can use any cooking oil.
- Spices: I have used turmeric powder, red chili powder, roasted cumin powder, and chaat masala. Add the spices to taste. You can also add more spices, such as ground black pepper, amchur powder, or coriander powder.
- Salt: If using salted peanuts, mix all the ingredients and taste. Then, add salt as required.
- Cilantro: Fresh coriander leaves provide lots of flavor to this chaat; do not skip them. You can also add finely chopped mint leaves if you like.
- Lemon Juice: Lemon juice provides a tangy and fresh flavor to the Roasted Peanut Salad. Add lemon juice according to your taste.

- Add roasted peanuts, chopped celery, green pepper, tomatoes, and green chili in a large bowl and stir well to mix.
- You can skip the green chili if you want or remove the seeds to make the salad less spicy.
- Add oil, turmeric powder, red chili powder, cumin powder, and chaat masala.
