I like to read cookbooks and to know more about different cuisines. I mostly borough from my library, but it is limited to Indian cookbooks. However, I found this time one of Chef Vikas Khanna’s books. I was very happy as he is one of my favorite chefs and as a bonus, this book was totally vegetarian.
So I think you got my point, yes this recipe is inspired by this book. However, I have modified this recipe as per my taste and obviously omitted garlic.
Tamarind and ginger give the perfect balance between spiciness and tanginess. These baked potato wedges with Indian flavor will give you a new experience with your favorite fries. Tamarind paste also gives a nice color to these wedges.

BAKED POTATO WEDGES WITH TAMARIND
Ingredients
- 5 Large potatoes
- 2 tablespoon cooking oil
- 1 teaspoon red chilli powder
- 1 teaspoon Paprika powder
- 1 teaspoon cumin seeds
- 2 teaspoon finely chopped ginger
- 1 tablespoon honey ((optional))
- 2 tablespoon Tamarind paste
- Salt to taste
- 2 tablespoon coriander leaves finely chopped
Instructions
- Grease baking sheet with cooking oil and set aside. Pre heat the oven to 425° F.
- Peel the potatoes and cut into wedges. If you want skin on, do not peel. But scrub and wash well the potatoes and cut into wedges. Set aside.
- In a large mixing bowl take all the ingredients except potato wedges and mix well.
- To this spice mix add potato wedges and mix well until all the wedges are coated well. Spread wedges onto baking sheet in single layer.
- Bake potato wedges for 40-45 minutes or until cook through and golden brown. During baking flip wedges 2-3 times for even cooking.
- Remove from the oven, take into serving bowl and sprinkle some finely chopped coriander leaves. Serve immediately with ketchup or marinara sauce.
