I am a huge fan of both watermelon and coconut. And having this smoothie with my two favorite ingredients is pure bliss for me. While I like to have freshly cut watermelon, and as it is, I also love indulging in watermelon juices and smoothies.
We can make a watermelon coconut smoothie with either fresh watermelon or frozen watermelon chunks. I personally prefer to make this smoothie using frozen watermelon. Frozen watermelon makes the smoothie thick and like a slush.
The only thing with this smoothie is that we have to freeze watermelon chunks, which requires a little planning ahead of time. However, if you already have frozen watermelon chunks, then making watermelon coconut smoothies is just a work of few minutes.
Consistency: This smoothie is creamy, frothy, and yet very light! Because of using frozen watermelon, the smoothie is thick and slushy.

So try freezing the freshly cut watermelon chunks, also use only the red part, and stay away from the white part. If your watermelon has lots of seeds, remove the seeds as many as possible. If you want a watermelon coconut smoothie thin and not too cold, do not freeze the watermelon.
Coconut Milk: Coconut milk provides more creaminess compare to other non-dairy milk like almond or cashew milk. But if you don’t have coconut milk or don’t want to use it, sub with other non-dairy milk of choice.
Sweetener: If your watermelon is very sweet, you may not even need any sweetener. Otherwise, add maple syrup or another choice of sweeteners like honey, agave, or even sugar.

- Process until everything combines, smooth and still thick.
- Do not overprocess to keep the smoothie thick and slushy.
