Fada Lapsi │Lapsi in Pressure Cooker

Fada Lapsi is traditional Indian dessert, very popular in Gujarat. It is very nutritious as well as delicious.

Ingredients
  

  • 1 Cup Broken wheat (( Dalia ))
  • 3 tablespoon Ghee (( clarified butter ))
  • ½ Cup cane sugar or white granulated sugar
  • 10 Almonds cut into slivers
  • ¼ teaspoon cardamom powder
  • 3 Cups water

Instructions
 

  • Heat Ghee in pressure cooker and once it is melted, add broken wheat and mix well.
  • Roast broken wheat in Ghee on medium low flame, stirring continuously. Roast it for 8-10 minutes or until broken wheat is very light brown in color and Ghee starts to separate. Add almond slivers and mix, continue cooking for a minute more.
  • Then turn off the heat and add 3 cups of water. Mix well and cover the pressure cooker with the lid.
  • I like to rest it for at least 2 hours or up to 6 hours. This way Fada Lapsi becomes very fluffy and each grain is big as it soaks water. But this step is optional, you can skip it and move onto next one.
  • Cook the Lapsi in pressure cooker on medium heat for 3-4 whistles. Let the cooker cool down until steam is released.
  • Heat the cooker again on low heat and add sugar and cardamom powder. Mix well until sugar is completely dissolved. Turn off the heat and transfer Fada Lapsi into serving bowl. Garnish with some more almonds and serve hot.
