This Flatbread Pizza is perfect for an easy, quick, fresh, and flavorful family dinner! I have topped the flatbread with herbed ricotta cheese, spinach, tomatoes, basil, and mozzarella for this recipe.
Preheat the oven to 425°F. Spray the baking sheet or pizza pan with non-stick oil or line it with parchment paper.
Making Herbed Ricotta Cheese
Combine ricotta cheese, milk, salt, black pepper, dried oregano, basil, red chili flakes, and lemon juice in a small bowl.
Mix until well combined, taste, and adjust the seasonings if required.
Making Flatbread Pizza
Depending on the size of the prepared pizza pan or baking sheet, place one or two flatbreads on it.
Spread the herbed ricotta cheese on the flatbreads. Then, top with spinach, tomatoes, and mozzarella.
Place fresh basil and jalapeno on the top and sprinkle dried oregano and red chili flakes. Bake the flatbread pizza for 10-12 minutes or until cheese melts and flatbreads are crisp. Or, follow the instructions on the package of store-bought flatbreads.
Remove from the oven and let it sit 2-3 minutes before slicing.
Notes
Flatbread: There are a variety of flatbreads available in the grocery store. You can use any flatbread of your choice.
Ricotta Cheese: You can use full-fat or low-fat ricotta cheese. If you want to make the cheese at home, check out the Homemade Ricotta Cheese recipe.
Spinach: We love spinach with ricotta and flatbread pizza. I highly recommend using baby spinach for the topping. Or, you can skip it if you want.
Tomatoes: Use fresh and ripe tomatoes but not overripe. I have sliced plum tomatoes, but you can also use cherry tomato halves.
Basil: If you do not have fresh basil, sprinkle some dried basil on top of the pizza.
