Flatbread Pizza with Herbed Ricotta

This Flatbread Pizza is perfect for an easy, quick, fresh, and flavorful family dinner! I have topped the flatbread with herbed ricotta cheese, spinach, tomatoes, basil, and mozzarella for this recipe.

Ingredients
  

For Herbed Ricotta Cheese

  • cups ricotta Cheese
  • 1 tablespoon milk
  • Salt to taste
  • Freshly ground black pepper to taste
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • ½ teaspoon red chili flakes
  • 1 tablespoon lemon juice

For Flatbread Pizza With Herbed Ricotta

  • 2 Flatbreads
  • Prepared herbed ricotta cheese
  • Spinach as required
  • Tomato slices as required
  • 1 cup shredded mozzarella cheese
  • Fresh basil
  • Pickled jalapeno as required (optional)
  • Dried oregano to sprinkle
  • Red chili flakes to sprinkle

Instructions
 

  • Preheat the oven to 425°F. Spray the baking sheet or pizza pan with non-stick oil or line it with parchment paper.

Making Herbed Ricotta Cheese

  • Combine ricotta cheese, milk, salt, black pepper, dried oregano, basil, red chili flakes, and lemon juice in a small bowl.
  • Mix until well combined, taste, and adjust the seasonings if required.

Making Flatbread Pizza

  • Depending on the size of the prepared pizza pan or baking sheet, place one or two flatbreads on it.
  • Spread the herbed ricotta cheese on the flatbreads. Then, top with spinach, tomatoes, and mozzarella.
  • Place fresh basil and jalapeno on the top and sprinkle dried oregano and red chili flakes. Bake the flatbread pizza for 10-12 minutes or until cheese melts and flatbreads are crisp. Or, follow the instructions on the package of store-bought flatbreads.
  • Remove from the oven and let it sit 2-3 minutes before slicing.

Notes

  1. Flatbread: There are a variety of flatbreads available in the grocery store. You can use any flatbread of your choice.
  2. Ricotta Cheese: You can use full-fat or low-fat ricotta cheese. If you want to make the cheese at home, check out the Homemade Ricotta Cheese recipe.
  3. Spinach: We love spinach with ricotta and flatbread pizza. I highly recommend using baby spinach for the topping. Or, you can skip it if you want.
  4. Tomatoes: Use fresh and ripe tomatoes but not overripe. I have sliced plum tomatoes, but you can also use cherry tomato halves.
  5. Basil: If you do not have fresh basil, sprinkle some dried basil on top of the pizza.
