Vegetarian Burrito Bowl with Avocado Sauce

This healthy and hearty meal is easy to prepare and very filling.

Ingredients
  

For Rice:

  • 1 Cup long grain rice ((or rice of your choice))
  • 1 teaspoon salt

For Black Bean Mixture:

  • 2 teaspoon olive oil or any cooking oil
  • 1 Jalapeno pepper finely chopped
  • 2 Bell pepper of any color, (diced)
  • 3 Cups boiled black beans or 2 cans ((398ml each) black beans, drained & rinsed)
  • ½ Cup water
  • 2 -3 tablespoon Homemade Taco Seasoning No Onion No Garlic
  • Salt to taste
  • ¼ Cup finely chopped coriander
  • 1 Lime juiced

For Avocado Sauce:

  • 1 Large avocado (pitted)
  • 1 Green chilli ((optional))
  • Cup sour cream or plain yogurt
  • Salt to taste
  • Freshly ground black pepper
  • 1 tablespoon lime juice

For Garnishing:

  • 2 Cups shredded baby spinach or lettuce
  • 1 Cup shredded cheese
  • Sour cream

Instructions
 

For Rice:

  • Cook rice in water with salt as per the instruction on the package of rice you are using. Make sure that rice is not mushy and sticky. Set aside.

For Black Bean Mixture:

  • In a pan or skillet add olive oil and jalapeno pepper and heat on medium flame. Then add diced bell pepper and cook for 2 minutes.
  • Add drained black beans, mix and add ½ cup of water. Add Homemade Taco Seasoning No Onion No Garlic, salt to taste and mix well. Let this mixture cook for few more minutes. Add coriander and lime juice, mix well. Taste and add more taco seasoning and salt if needed. Mix and turn off the heat.

For Avocado Sauce:

  • Add all the ingredients of avocado sauce into food processor or blender and blend until smooth. Taste and adjust salt or lime juice if needed.
  • For serving, divide rice in to individual bowls. Top each with black bean mixture and avocado sauce. Garnish with shredded baby spinach or lettuce, shredded cheese and sour cream. Or add any garnishes of your choice.
