This Custard Powder Cake is beyond easy and simple to make, but it is super delicious, full of vanilla flavor, and perfect as a tea cake! Moreover, I have added some candied fruits to make the cake more delectable.
Preheat the oven to 325°F (160°C). Grease an 8-inch round cake pan well with oil or butter and set it aside.
Add all-purpose flour, custard powder, baking powder, baking soda, and salt in a medium bowl, and whisk well.
Add tutti frutti, if you like to the flour mixture, and mix well.
Mix melted butter, granulated sugar, and vanilla in a large mixing bowl until well combined.
Now add dry ingredients and milk alternatively into wet ingredients in two parts. Mix until everything is just combined; do not overmix.
Pour the batter into the prepared pan and bake the cake in the oven for 40-45 minutes or until a cake skewer inserted in the center comes out clean.
Remove the cake from the oven and place the pan on a cooling rack. Allow the cake to cool down completely in the pan before removing and slicing it.
Serving and Storing Suggestions
Eggless Custard Powder Cake does not require any frosting. However, you can sprinkle some icing sugar on top of the cake before slicing and serving.
This cake is delicious but can be made decadent while served with a scoop of vanilla ice cream.
The cake stays at room temperature, tightly covered, for three days.
Store the leftover cake in the fridge for 7-8 days.
Notes
Measuring: Use a kitchen scale if you have one to measure the ingredients for the best results.
Custard Powder: I have used vanilla custard powder, which provides color and flavor to the cake. However, if you like to make a mango-flavored cake, you can use the same amount of mango custard powder. I will not recommend using plain cornstarch instead of custard powder, as I have not tried the recipe with it.
Tutti Frutti: It is optional to use tutti frutti, but I highly recommend to use if you have it handy. Instead of tutti fruit, you can add finely chopped dried fruits or nuts of your choice.
Mixing The Batter: Do not overmix the batter to get a soft and tender cake.
