BAKED POTATO WEDGES WITH TAMARIND
This recipe is a healthy version of our favourite french fries. These potato wedges are spicy, tangy and very satisfying.

Grease baking sheet with cooking oil and set aside. Pre heat the oven to 425° F.
Peel the potatoes and cut into wedges. If you want skin on, do not peel. But scrub and wash well the potatoes and cut into wedges. Set aside.
In a large mixing bowl take all the ingredients except potato wedges and mix well.
To this spice mix add potato wedges and mix well until all the wedges are coated well. Spread wedges onto baking sheet in single layer.
Bake potato wedges for 40-45 minutes or until cook through and golden brown. During baking flip wedges 2-3 times for even cooking.
Remove from the oven, take into serving bowl and sprinkle some finely chopped coriander leaves. Serve immediately with ketchup or marinara sauce.
