BAKED POTATO WEDGES WITH TAMARIND

This recipe is a healthy version of our favourite french fries. These potato wedges are spicy, tangy and very satisfying.

Ingredients
  

  • 5 Large potatoes
  • 2 tablespoon cooking oil
  • 1 teaspoon red chilli powder
  • 1 teaspoon Paprika powder
  • 1 teaspoon cumin seeds
  • 2 teaspoon finely chopped ginger
  • 1 tablespoon honey ((optional))
  • 2 tablespoon Tamarind paste
  • Salt to taste
  • 2 tablespoon coriander leaves finely chopped

Instructions
 

  • Grease baking sheet with cooking oil and set aside. Pre heat the oven to 425° F.
  • Peel the potatoes and cut into wedges. If you want skin on, do not peel. But scrub and wash well the potatoes and cut into wedges. Set aside.
  • In a large mixing bowl take all the ingredients except potato wedges and mix well.
  • To this spice mix add potato wedges and mix well until all the wedges are coated well. Spread wedges onto baking sheet in single layer.
  • Bake potato wedges for 40-45 minutes or until cook through and golden brown. During baking flip wedges 2-3 times for even cooking.
  • Remove from the oven, take into serving bowl and sprinkle some finely chopped coriander leaves. Serve immediately with ketchup or marinara sauce.
