If you do not already have frozen watermelon, you can freeze freshly cut watermelon chunks before making the smoothie.
To freeze watermelon, spread watermelon chunks on the baking tray lined with a silicone mat or parchment paper. Then place the tray in the freezer until watermelon chunks freeze entirely or at least for an hour.
Making The Watermelon and Coconut Smoothie
Add frozen watermelon, coconut milk, maple syrup, and salt to the blender.
Process until everything combines, smooth and still thick. Do not overprocess to keep the smoothie thick and slushy.
Serve immediately, topped with watermelon chunks if desired.

Watermelon Coconut Smoothie is best served immediately.
If you desire, top the smoothie with watermelon chunks or shredded coconut.
The other toppings could be mint leaves or cacao nibs.
If you have a leftover smoothie, place it in the fridge for a couple of hours. However, please note that the smoothie consistency will change.
Notes
Using frozen watermelon makes the smoothie thick and creamy. But if you do not want an icy smoothie, use freshly cut watermelon. But the consistency will be different; the smoothie will be thin. However, add some ice to the blender if not using frozen watermelon.
To make the smoothie even creamier, use coconut cream instead of coconut milk.
You can skip adding sea salt if you want. Also, if you do not have sea salt, you can use regular salt.
If you prefer, you can add vanilla extract for some extra flavor.
